On the 24th of September we celebrate Heritage Day in South Africa. This holiday also marks the National South African Braai Day. To Braai means to cook your food on an open fire.

In that spirit, I would like to share a wine based marinade with you. You can vary the flavour depending on what kind of red wine you choose.

For a greater intensity, try using a full-bodied red, such as our Shiraz, Cabernet Sauvignon or Zinfandel. For a more delicate flavour, use a lighter red such as our Merlot or 'Red'. Use on: Chicken thighs, duck, beef and lamb.

INGREDIENTS

• 2 cups red wine
• 1 small onion, diced
• 2 3-inch strips orange zest
• 2 sprigs fresh rosemary, coarsely chopped
• 2 tablespoons red currant jelly
• 1 teaspoon salt
• 1 teaspoon freshly ground pepper


Combine wine, onion, orange zest, rosemary, jelly, salt and pepper in a medium bowl. Pour the marinade into a shallow baking dish or for marinating 4 to 8 servings of your chosen protein.
