Bouchard Finlayson’s WITH CARE event series continues to unfold through winter, with its next chapter, Patience Poured: A Retrospective of Bouchard Finlayson’s Finest Vintages, taking place on Wednesday, 29 July at its POP UP in Hermanus.

Guests will be able to taste select and rare vintages from the estate cellar, and enjoy access to limited and library releases.

Where previous gatherings have explored origin and structure, this month’s edition turns to time. The event considers the quiet transformation that takes place long after a wine leaves the cellar, as balance settles, texture refines and the character of each vintage reveals itself with increasing clarity.

Presented as part of WITH CARE’s Care for Land chapter, the evening offers a rare opportunity to engage with the estate’s cellaring philosophy. Within the maritime setting of the Hemel-en-Aarde Valley, wines are shaped by cool coastal influence and careful vineyard stewardship. With time, these elements begin to align, drawing each component into a more complete and resolved expression.

Created for those who seek a deeper understanding of wine, the evening offers access to a curated selection of the estate’s finest and most expressive vintages. Through guided tasting and conversation, guests are invited to explore how ageing shapes structure, aromas and overall composition. Attention turns to the relationship between acidity, tannin and fruit, and how these elements are carried forward through time.
