The soundtrack is curated, and the focus is on curiosity over credentials, stories over specs, and connection over ceremony.

The night begins gently. Guests arrive to warm lights under the olive trees, a welcome pour in hand, and three small paired bites delivered to the table. There’s a short, informal introduction – no speeches, no pressure to “know your wine”. Just enough guidance to set the scene.

And then? You’re free.

Free to explore a barrel. Free to purchase pizza and wine. Free to join a conversation, disappear into the music, or linger longer than you planned. Because Unfiltered Thursdaze isn’t a masterclass. It’s a conversation.

At the heart of the experience is unfiltered wine, in-progress, experimental and exclusive. Guests taste wines you don’t usually get access to, from barrel cuts and tank samples to trial blends that are still finding their final shape. There’s no right or wrong way to taste – you’re simply invited to discover what you like. Each week also features Guess the Barrel, a playful ritual where guests try to identify the varietal and life stage of a featured barrel. Correct guesses go into a draw to win tickets to another Unfiltered Thursdaze, making it low-pressure, slightly competitive, and surprisingly addictive.

During the evening, someone from our Durbanville Hills’ winemaking team will move from table to table, not to lecture, but to tell stories. The kind you’d hear at a dinner party, not a tasting room. Why they argued about a particular barrel. What surprised them in a certain batch. The risky decision they weren’t sure would pay off. Or, occasionally, what song a wine would be – if wine could have a soundtrack.

And speaking of sound, music is the unsung hero of the night. The soundtrack is curated with intention. Starting in deep and melodic house unhurried, warm, and considered. As the night progresses, the sound subtly lifts, staying rooted in house while setting the rhythm for conversation, movement, and mood.

Not every moment needs explaining – some are meant to be captured. On selected evenings, a photo booth captures candid, unfiltered moments that feel like memories.
