- Crispy chicken and pork terrine with sweet mustard, pickles and drunken melba
- Beef fat poached prawns with confit tomatoes and sauce nantau
- Butter roasted fish with green pepper puree, chickpea ragout, beer battered onion rings and clam bordelaise or Smoked duck with chestnut puree, confit duck dauphinoise, pickled kohlrabi, charred broccoli and orange duck sauce
- Not a Waldorf with saffron poached peaches, gorgonzola parfait, grapes, candied pecans, celery jam, port gel and pecan nut velouté
- Minted chocolate marquise with ulce de leche and salted caramel ice-cream
