Guests will look on while our butcher debones pork and then divides it into primary cuts – coppa, pancetta, loin and leg. We learn more about mixing spices and pickling pork for charcuterie. Jaco also shows us how to use beef silverside for making biltong, along with mixing biltong spices and pickling the meat before drying.
